Two blog posts in a week? Call me crazy! It just has been so busy around here and I am still shopping around for a new website and blog.
Life at LEAN by Drea, LLC has been going great. We have had over 70 clients go through the Fall Cleanse in the first group and have 100 currently enrolled in the second group. How awesome is that? Peoples lives are changing and their testimonies and results are unbelievable.
I have been busy in my kitchen this week and trying to come up with creative ways to use the all of my produce in my refrigerator. I made a big pot of chicken veggie soup, made a energy boosting juice, and today was my favorite by far, Asian Turkey Lettuce Wraps. There is no wrong mixture here so just use what you have or what you like. It is hard for me to write recipes because I just use what I have on hand or what I think will taste good. Change it up however you like. I wish I would have had green onions so I would add that next time. I stay away from soy sauce and I use tamari or coconut aminos instead but feel free to use soy sauce if that is what you like.
1 LB ground turkey, cooked
1 carrot, shredded or finely chopped
1 red bell pepper, finely chopped
1 stalk celery, finely chopped
2 cloves garlic, minced
1 thumbnail size piece of ginger, minced
1 jalapeño, seeded and finely chopped (optional)
1/4 cup water chestnuts, chopped
2 TBSP sirracha sauce
3 TBSP Coconut Aminos or Gluten Free Tamari (soy sauce alternatives)
1 tsp fish sauce
2 tsp rice vinegar
cilantro, rough chopped
cucumber, seeded and chopped
1 TBSP Raw Honey
1 TBSP sirracha hot sauce
3 TBSP Coconut aminos or Tamari
1 TBSP spicy Mustard
1/2 tsp sesame oil
2 TBSP rice vinegar
Bibb, butter, romaine, or iceberg for the wrap. My favorite is live butter lettuce.
1. Heat sesame oil in pan. Lightly sauté the garlic, ginger, carrots, celery, red peppers, jalapeño until tender crisp. Add the cooked turkey and the rest of the turkey mixture ingredients. adjust seasonings to your taste and heat until warmed through.
2. Mix all of the sauce ingredients
3. Prep all of the toppings for your wraps
4. Wash and dry your lettuce leaves
5. Set everything up for assembly. Fill a lettuce leaf with turkey mixture, top with cilantro, radish, cucumber, and a few chopped cashews. Drizzle the sauce on your wrap.
6. Dig in!
These tasty wraps can be a great snack, lunch, or appetizer. Remember to use what you have on hand and adjust the heat and spice to your liking. Get in the kitchen, play, have fun, and get creative. It does not have to be boring to EAT CLEAN!
