I love making different variations of energy balls. They are so handy and you can change the ingredients to suit you or your family. My winter cleanse contains several different recipe variations.
- 2 cups pitted Medjool dates, soaked to soften
- 1 cup shredded coconut
- 1 cup walnuts
- ¼ cup raw cacao powder
- 1-2 tablespoon coconut oil, melted
- ½ teaspoon organic pure vanilla extract
- Pinch of cinnamon
- Additional shredded coconut for rolling
Process everything (except the extra coconut for rolling) in a food processor or vitamix until well combined.
Form dough into balls, then roll in the shredded coconut.
Put in the freezer for at least an hour before you serve. Store in an airtight container in the fridge or freezer.
They make a great snack, dessert, or even breakfast on the run. Good combos for the kids are peanut butter, oats, and dark chocolate chips. I also like to add in chia, flax, or hemp seeds. Get creative!
