Marinated Grilled Shrimp with Mango Salsa (adapted from Weight watchers)
I used to make this all of the time when I was in Weight Watchers. It is so pretty and full of flavor. I have changed the salsa to make it my own and added jalapeno, red peppers, and avocados. Get creative and have fun in the kitchen.
1 tsp orange zest
2 pounds large raw shrimp, thawed (I only had cooked ones tonight but I prefer raw)
1 jalapeno, seeded and chopped
1 TBSP chili powder
3 garlic cloves, minced
1 tsp cumin
1/4 tsp pink salt or regular
pinch of cayenne pepper
4 skewers soaked in water
Grate 1 tsp lime zest from the lime and then juice it. Combine lime zest, orange zest, lime juice and shrimp in a large bowl. Add jalapeno, chili powder, garlic, cumin, pink salt, and cayenne pepper. Cover and refrigerate for 30 minutes.
Prepare your grill to medium-high heat. Spray the grill rack if you need to. Thread the shrimp onto skewers and grill until just opaque in the center. About 2 minutes a side. Serve with mango salsa.
2 large mangoes, peeled, pitted, and diced
1/2 half of an onion, red or white, finely chopped
1/2 red pepper, chopped
1/2-1 jalapeno, seeded finely chopped
2 TBSP fresh cilantro, finely chopped
1 avocado, diced
1 TBSP freshly squeezed lime juice
dash of salt to taste
dash of cayenne to taste
Mix everything together in the bowl and serve it with the grilled shrimp, fish, or chips. I served it with roasted broccolini (recipe on previous blog entry). It also tastes great on a salad with the mango salsa as the dressing.
