Fresh Basil Chimichurri Sauce

The sun was out finally today, so we decided to fire up the grill.   I had a bunch of fresh basil to use up so I decided to whip up an easy chimichurri sauce to have with our steaks. The red pepper flakes gave it a nice kick and I might even add a little more next time.

Chimichurri Sauce

1 cup finely packed fresh basil leaves
3 cloves garlic, peeled
1/2 cup olive oil, I used a little less
2 tbsp red wine vinegar
1 tsp pink salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes

Combine all ingredients in the bowl of a mini food processor and process until the basil pieces are small and even.

Drizzle on chicken, steak, fish  or whatever you like. It is also great with a baguette  sliced and toasted with thinly sliced steak, and a drizzle of this sauce. Top with some fresh parmesan and you have a great appetizer.

Makes about 8 servings

 

 

We served this over grilled steaks with mushrooms and fresh cut sweet potato fries. Delicious!
