Taco night happens frequently in our house. It is probably because they are quick, nutritious, and we all like them. We tend to make them a little bit different in our house. We usually use the 99% lean ground turnkey for the meat, I use romaine lettuce leaves for my shell, and I use almond pepper-jack cheese for my cheese. We also cut up avocados and peppers for toppings along with all of the typical taco fixings. Most of my family prefers regular hard shells so they are available as well as whole grain soft shells.
Tonight I even had help cooking from Jackson.
I happened to make a big batch of brown spanish rice a couple weeks ago and froze it so that made for a quick side dish tonight.
The Almond Pepper-Jack cheese that I enjoy
I have always been a label reader, but I am now even more so. I used to use packets for taco seasoning and now I am making my own. It is so easy and you can adjust the flavor to your own family or with what you have on hand. Put it in a sealed container in your pantry so you always have it on hand.
Homemade Taco Seasoning

1 Tbsp chili powder
1/4 tsp garlic powder (I used 1/2 tsp of garlic powder because I didn’t have any onion powder on hand)
1/4 tsp onion powder (I didn’t have any so I used 1/4 more of the garlic powder)
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1/2 to 1 tsp salt depending on taste
1 tsp black pepper (I forgot this but it was fine without)
I mixed up it in a mason jar for easy storage. Use 2 to 3 Tbsp for 1 pound of meat with 1/2 to 3/4 cup water. Tonight I used 2 Tbsp with 1 pound of lean ground turkey and 3/4 cups water and let simmer. Taste great and so easy to do.
Ever since I got my vitamix, I have wanted to make salsa in it. Since it was taco night, it was the perfect night. I would have preferred a lime but I only had a lemon. It worked just fine. I can’t wait to make this with fresh summer tomatoes!
California Salsa (Vitamix)
1/2 medium onion, peeled, halved
1 jalapeno, seeded
1/4 cup cilantro leaves
1 tsp fresh squeezed lemon or lime juice
6 ripe Roma tomatoes, quartered
1/2 tsp salt
I added one garlic clove to the recipe as well
Place jalapeno, cilantro, onion, lemon or lime juice, salt, and 6 of the tomato quarters in the Vitamix container.
Secure lid, Select variable 5 and pulse twice.
Add the remaining tomato quarters through the lid plug opening. Continue to pulse until desired consistency is reached, about 5 times.
