Simple but delicious! Roasted Broccolini
1 TBSP EVOO (Extra Virgin Olive Oil)
Fresh squeezed lemon (optional)
Wash and pat dry the Broccolini. Toss with EVOO and season with pink salt and pepper. Squeeze fresh lemon on if you would like. Roast 10-12 minutes at 400 or until tender.
Cooking healthy does not need to be difficult. This with fresh cut up fruit and something on the grill is an easy summer meal.
Broccolini is sweeter then broccoli so the kids will enjoy this as well. It contains many phytonutrients which have significant anti-cancer properties. Who likes Broccolini?
