I roast vegetables all of the time but I rarely roast cauliflower. Nobody else in my family likes it besides me. I wanted to be able to use some for a pizza crust so I made it last night, ate it as a side dish and reserved 1 cup for my pizza crust today. I ended up loving both dishes. If you are a fan of cauliflower, you will too. Although I didn’t even think the pizza tasted remotely like it was made with cauliflower. You be the judge.
1 head cauliflower
2 TBSP Extra Virgin Olive Oil
Whatever seasonings you prefer ( I used TJs 21 seasoning salute, pink sea salt, and paprika)
Chop the cauliflower into even sized pieces. Put in zip lock bag and add oil and seasoning. Shake until evenly coated. Line a pan with foil for easy clean up and pour cauliflower mixture onto pan.
Roast at 425 for 20 minutes
Reserve 1 cup for tomorrows pizza crust and enjoy the rest as a snack, side dish or an extra pizza crust.
Roasted Cauliflower Pizza Crust
1 cup roasted cauliflower, I ran it through variable 1 in the Vitamix for a rough chop into small even pieces. You could use food processor as well.
1 egg, lightly beaten
3/4 to one cup cheese (I used 3/4 cup mozzarella almond cheese)
any pizza toppings (I used turkey pepperoni, yellow peppers,onions, scallions, garlic, spinach, sundried tomatoes, mushrooms, and kalamata olives)
more cheese to top if you would like. I did not use any since there was cheese in the crust.
Almond Cheese comes in many varieties. It is only 50 calories, 7 grams of protein, and 1 gram of fat per serving. You just have to shred it yourself. I love it!
Preheat oven to 425. I preheated my pizza stone too. Mix together and form a crust on the pizza stone. Bake crust for about 12 minutes.
Add all of your toppings and bake about 5 minutes more or until toppings are cooked through.
